When it comes to convenience, you can't really beat these tortillas. Whip them up in less than 15 minutes with just 3 ingredients, then get creative with your fillings! Whether making wraps, breakfast burritos, or tacos, our fiber-packed tortillas will have you eating in no time.
Flax Seed Tortillas
Yield: 4-6 small tortillas // Serving Size: 1 tortilla // Prep time: 15 Minutes
INGREDIENTS
1/2 cup flax seeds
1/2 cup boiling water
Pinch of salt
INSTRUCTIONS
Grind your flax seeds in a high power blender or food processor until you have flax meal and no large pieces remain.
In a bowl, combine your flax meal, salt, and boiling water - please note that the temperature is important!
Stir for about 1 minute. As you stir, your dough will become uniform. Your dough is ready once it forms a ball in the middle of the bowl and does not stick to the sides.
Form your dough into 1 inch balls. To make the tortillas, slightly flatten each ball and roll between two pieces of parchment paper to desired thickness. If your tortillas are not uniform around the edges, feel free to use a bowl or a pan lid to cut a circle into your tortilla. Save the excess to form more balls.
Heat a nonstick pan over low heat. Gently remove the tortilla from the parchment paper and place in the pan for about a minute. Flip the tortilla, cook for an additional 30 seconds, and remove from heat. I like to place mine on a cooling rack so they release moisture and don’t get soggy. Be careful not to cook for too long so that the tortillas stay pliable.
Repeat for all of your tortillas. Serve as wraps or tacos. For wraps, make your tortillas a bit larger :)
Store in an airtight container in the fridge for 4-5 days, or freeze with a layer of parchment paper in between each tortilla to prevent sticking for longer term storage.
